20 min Mediterranean Garlic Lemon Swai & Dairy-Free Pasta
Aldi had some swai for a great deal recently. I found this recipe from Sweet & Savory Meals that looked quick and adapted it and make it sheet pan ready. Not everything I come up with works, but this one… this one was a winner!
In less than 20 minutes, we were eating what tasted and felt like a meal I’d spent hours preparing!
And, even better, the leftovers stored well for dinner the next day (which can’t be said for all fish dishes).
My original intention was to make mac & cheese but we were out of dairy-free mac (hubby recently diagnosed with a true dairy allergy). I was thinking of alternatives when the oven went off. Pulling out the pan from the oven, the aroma… oh my! Wow! It smelt like just so sweet, so deep. I thought, “why not use it over the noodles?”
FAQ: wouldn’t the pasta just taste like the dish then?
Surprisingly, no! It has its own taste! It is so flavorful! Like it reminded me of the pasta dish my cousin’s Italy ex-change student made year ago, type of good!
So I really hope you give this one a go. Even if you aren’t a crazy fan of fish, I think you’ll like it!
Pro Tip: Also, a major benefit of cooking with fish is that it defrosts so quick! These fillets weren’t completely defrosted by the time I went to cook. 5 minutes under running lukewarm water and bam. Ready to go!
Fish makes a great, “whoops, I forgot to defrost ____” dinner swap in a pinch.

- Pan Bake:
- Simply lay fillets, tomatoes, and asparagus out on a pan. Drizzle olive oil and coat with all the ingredients for the garlic butter sauce . Bake a 425 degree for 12-15 minutes, until the fillets reach an internal temp of at least 145 degrees.
- Make the Side Pasta:
- To a medium-sized pan, boil about 3 cups of water. Add about 4 servings or about 12 oz of pasta (three-quarters of a 1 lb box) and cook per packaging. Add the drippings from the sheet pan to the pasta to taste.
- Plate & Enjoy:
- Plate fish, veggies, and pasta. Drizzle the sauce on top with a spoon on the fillets, as well, and garnish with lemon wedges and parsley.

- Serve immediately.
